I recently made this super quick, but impressive Autumnal Eton Mess for my Mum’s birthday. Next time I might add a splash of rum to make it a bit festive. It literally takes 10 minutes to throw together. (Which included hand-whipping the cream as I don’t have an electric whisk!) At only £1.30 per portion it’s a perfect easy centre-piece.


  • 450ml Double Cream
  • 8-10 Figs
  • 6 Meringues
  • 150g Gingernuts
  • 50g Dark Chocolate

Whip the cream and put to one side. Chop the figs and crush the meringues and gingernuts. Mix all the ingredients together, keeping a few figs aside for decoration. Then drizzle with some melted dark chocolate, and top with the remaining figs.
